Bare Island Fort - La Perouse

Last week we visited the incredible Bare Island Fort in La Perouse (named in commemoration of the French explorer 'Jean-Francois de Galaup, Comte de la Perouse' who went on an expedition to explore the lands and disappeared along with his ship and crew, never to be seen again). Bare island fort was build on the already existing island in 1877 to protect Sydney city from Seaborne attack. Unfortunately, the actual fort can now only be accessed via a guided tour on Sundays, so we didn't venture past the islands gates.. but we do plan an end-of-week visit soon.
The area itself was spectacular. We spent a full day exploring rock pools, spying crabs and fish and venturing through the surrounding hills and beaches.

Saving money - tips and tricks.

Being a stay at home mum with rent and bills to pay, a little mouth to feed and a house to maintain, saving money can often seem impossible. The cost of living is at an all time high but with a few different strategies, it is possible to get by - even with some extra pocket money for certain luxuries.
I don't run my blog (or any other networking platform) in an effort to fabricate my life or make it seem grander than it is. So please don't get me wrong, times get tough and everything requires hard work and determination .. but with a little planning, life certainly get's easier.

1. Budget. It's the oldest trick in the book, I know .. but it helps! Figure out how much money you have coming in on a weekly or fortnightly basis and deduct weekly bill payments/expenses and groceries.

2. Sell. There is a market for your old and unwanted goods, I swear! Be it outgrown baby clothes, old toys, homewares or clothes that barely see the light of day - somebody will buy it! There are a bunch of websites you can use to sell your goods but you can also have a garage sale or host a market stall. The best thing about this is that you get to simplify your life a little bit more and it's also cash in your pocket.

3. Invest. There are a bunch of different ways to invest your extra money, one being clime super who specialise in value investing. I also like to see my purchases as an investment so to speak. Always buy things that you will be able to re-sell in the future!

4. Buy secondhand. I almost always buy my goods secondhand. It's a great way to buy items cheaply that are also more unique. It's no secret that I am a bit of an op shopping fiend. I buy clothes second hand and rarely pay over $5 an item. This way, I've managed to dress daughter (and myself) in vintage and designer goods for next to nothing. Of course, it's not just clothes that I buy second hand - my entire house has been furnished with glorious mid century pieces that I've bought second hand for next to nothing!

5. Make your own coffee. I'm barely human without my morning caffeine hit and in an effort to spend less - I purchased a cheap espresso machine and a $2 milk frother and stopped buying take aways. I couldn't tell you how much money I've saved this way - $4 a cup doesn't seem like such a grand amount at the time, but it all adds up!

6. Eat less meat. I don't want to seem too preachy, but a plant based diet is definitely cheaper than one that incorporates animal products. Adding more meat-free meals to your diet is not only going to improve your health - it'll also give your bank account a little boost!

7. Start your own business. I have always had a passion for photography .. and now I get paid to capture memories! If you're good at something, don't let that talent go to waste.

8. Choose entertainment that is free. We go to the park on most days. Daisy has the absolute time of her life and we don't pay a cent. There are also plenty of frequent free events, festivals and markets that we attend (I'm sure you can find some in your area) that are specially catered to children and parents.

For week 4, we picked out "V is for Vegan - the ABC's of being kind" by Ruby Roth. Daisy loves all the animals in this book and it does make me quite proud when she flicks through the pages repeating "we don't eat our friends". This book is set out like any classic alphabet learning book with bonus educational tid-bits on being kind to animals and the environment... whilst being very cute!

The Big Splash & a Peppa Pig giveaway!

Peppa Pig is collaborating with Life's Little Treasures Foundation for their new campaign The Big Splash, a charity campaign to raise money for premature and sick babies. From March 1 to April 30 people are encouraged to sponsor children to 'Splash like Peppa' and participate in fundraising by holding splash parties at the beach, their homes or by attending a Big Splash event held by their local pool, creating as much splash as possible in five minutes. Parents can register their children at thebigsplash.org.au and get splashing just like Peppa any time in March and April!

We recently attended The Big Splash morning tea media launch at Annette Kellerman Aquatic Centre in Enmore. Daisy was completely overwhelmed by all of the Peppa goodness (Daisy is generally too much of a busybody for television .. but Peppa Pig has the strange ability to get my antsy girl to sit still for 5 minutes). She spent the morning participating in Peppa related activities, splashing in the baby pool and scoffing down sparkly cupcakes. She was absolutely thrilled to meet Peppa Pig in person and rambled on about the encounter all day long, telling me that Peppa was reeeally big in person and repeatedly asking if she can go directly to Peppa's house next time! We had such a blast.

This weeks book is the beautifully illustrated 'Little Cat and the Big Red Bus' by Jane Godwin. 
Daisy absolutely loves this story, especially when we come to the page where Cat is fast asleep on the bus, she likes to kiss her forehead and say "shhh, goodnight". A new favourite, for sure.

Healthy Vegan Snickers Bar - A Recipe.

I've made these vegan 'Snickers' bars a few times .. and they're always devoured quickly. So delicious, and certainly healthier with date based 'caramel' and almond butter nougat. Yum!

WHAT YOU NEED:
{ nougat }
- 1/2 cup of almond butter
- 2 tbs maple syrup or rice malt syrup
- 2 tbs coconut flour

{ caramel }
- 9 pitted medjool dates
- 1/3 cup of water
- 1 ts vanilla extract
- 1 tbs sunflower or coconut oil
- 1 pinch of salt

- 1/2 cup peanuts
- 1 cup vegan chocolate (I used Sweet William)


METHOD:
1 - To create the nougat layer, mix the syrup, almost butter and coconut flower in a small mixing bowl. Spread it on a tray lined in baking paper to form a rectangle shape about a centimetre thick. Place in the freezer.
2 - To make the caramel, place the caramel ingredients in a food processor or blender and pulse until it creates a creamy caramel sauce.
3 - Cover the nougat layer with the caramel and layer with peanuts. Place in the freezer for 30 minutes.
4 - After thirty minutes, slice into bars whilst melting the chocolate (either in a glass bowl in the microwave or over the stove top)
5 - Coat top and bottom of the bars with chocolate and freeze.
6 - After the chocolate is set, eat up !

March has been so busy for me! I have spent each weekend photographing weddings, pregnancies, parties, engagements and beautiful families. It has been such an absolute pleasure to meet and photograph such wonderful people.

As predicted, I am a bit behind with my weekly portraits. So here are the last two weeks in the form of Iphone photos. Life has been so busy lately, chasing after my hyperactive almost 3 year old and trying to run my own business efficiently - I don't have much time to sit down and blog .. or take photographs for my own joy (the non-stop rain doesn't help). Daisy got her hair cut for the first time ever the other day and she suddenly looks so grown up. I hope this picture of her looking cute as pie makes up for my very lazy blogging as of late.
